Dr. M. Victoria Ruiz-Méndez holds a Ph.D. in Chemistry, specializing in fats and oils research. She has been affiliated with IG-CSIC, where she oversees the Pilot Plants and leads the “Modifications of Lipids in Foods” research group. Her work primarily focuses on oil processing and the utilization of products and by-products from the refining process, which is crucial for all edible oils and fats, with the exception of virgin olive oil.
